- Some date the word "zest" back only to the 1670s and the French word "zeste," "piece of orange or lemon peel used as a flavoring." Others trace it further back to Ancient Greek with the meaning "to boil" or "to bubble," the same as the Sanskrit "yeṣati" ("to boil, bubble up") or "yásati," "to froth up, foam." Hence the English word "yeast." Small world.
